When Richard and Angela Fray opened the first Dat Jerk Caribbean Chargrill, they weren’t simply launching a restaurant. They were on a mission to elevate Caribbean cuisine, challenge outdated perceptions, and build a brand that celebrated culture while creating economic opportunity.
Ten years later, that vision has grown into one of Maryland’s most recognized fast casual restaurant brands. With five operating locations, two new restaurants in development, and expansion plans reaching into Texas, Dat Jerk has earned a loyal following for its fresh ingredients, bold flavors, and exceptional guest experience. Often referred to as the “Caribbean Chipotle,” the brand has successfully combined the speed and consistency of a national chain with the authenticity and heart of a family business.
Behind the success is a partnership built on complementary strengths. Richard Fray, Founder and CEO, brought decades of experience in franchising and entrepreneurship, while Angela Melton Fray, COO and former Vice President of Business Development for the CBS Television Stations Group, helped transform the concept into a scalable operation focused on systems, people, and sustainable growth.
Building Careers, Not Just Restaurants
From the beginning, the Frays believed success would be measured by more than sales. Over the past decade, Dat Jerk has created career opportunities for hundreds of employees across Maryland, many of whom have grown from entry level positions into leadership roles.
The company has invested heavily in workforce development through leadership training, apprenticeship programs, mentorship, and professional development initiatives. That commitment has helped team members build meaningful careers while strengthening the hospitality workforce throughout the region.
Beyond its restaurants, Dat Jerk remains deeply engaged in the communities it serves, supporting schools, nonprofits, youth programs, and local organizations that help create stronger neighborhoods and future leaders.
“Our goal has never been just to open more restaurants,” says Richard Fray. “We want to build something that creates opportunity for others and leaves a lasting impact long after we’re gone.”
Growing with the Right Partners: FSC First!
As the company prepared for its next chapter of expansion, access to capital and trusted business resources became increasingly important. That’s where FSC First entered the picture.
Through its commitment to supporting local entrepreneurs and small businesses, FSC First has helped provide the resources and guidance needed for companies like Dat Jerk to continue investing, growing, and creating jobs within the region.
“FSC FIRST has been an incredible financial partner throughout our growth journey,” Richard Fray shared. “Their belief in our business gave us the ability to continue creating jobs, investing into our communities, and building a sustainable brand with long-term impact.”
Today, as the brand prepares to enter new markets and launch exciting new concepts, including the full service Dat Jerk Island restaurant, the Frays remain focused on the same principles that inspired the business from day one: quality, culture, community, and opportunity.
What began as a single restaurant has evolved into a growing regional brand, proving that with vision, discipline, and the right support, a family business can become a powerful engine for economic growth and community impact.
